Chicken Tandoori without/Bina oven/Tandoor * Cook with Razia* in hindi



Chicken Tandoori in Tawa without use of oven or Tandoor

Ingredients:

Chicken - 1 whole chicken cut into 10 pieces
Butter or Ghee for Brushing on top
Chat Masala for Sprinkling on top

For First Marination:
Chilli Powder - 1 tblspn
Salt to taste
Lemon Juice - 2 to 3 tblspn

For Second Marination:
Thick Unsour Curd / Yogurt - 1 cup
Chilli Powder - 1 tblspn
Coriander Powder / Malli Podi - 2 tblspn
Cumin Powder - 2 tsp
Chat Masala Powder - 1 tblspn
Black Pepper Powder - 1 tsp
Garam Masala Powder - 1 tblspn
Turmeric Powder / Manjal Podi - 1 tsp
Red Food Colouring a pinch
Ginger Garlic Paste - 2 tblspn
Kasuri Methi Leaves - 1 tblspn

Method:

Take chicken in a bowl, make deep slits on them. Add salt, chilli powder and lemon juice to them and mix well. Leave this aside for 30 mins.

Now take second marination ingredients in a bowl and mix well. Pour this over the marinated chicken and mix well.

Leave this to marinate for 6 hours or over night.

Next day, remove it and let it come to room temp.

Preheat oven to 250 Degree C.

Now place the chicken over a foil lined baking tray and pop it in oven for 5 mins, remove it and flip over, apply leftover marination over it if you have any and bake it for 5 more mins.Remove the tray from oven, apply ghee all over it.

Now reduce the oven temp to 160 degree C and bake it for 10 more mins.

Remove it and flip over and apply ghee all over it and bake it for 10 more mins.

Remove it and flip over and apply ghee all over it and bake it for 10 more mins.

Now remove it and set aside. Mean time, increase the oven temp to 250 degree C and set the mode to grill.

Place the tray near to the grill and cook it for 5 mins till you see some black spots over the chicken.

Remove it from oven, give a final glaze with ghee and sprinkle some chat masala over it.

Serve.

Homemade Chicken Biryani / Hyderabadi Chicken Biryani in hindi *cook with Razia*

Chicken Dum Biryani is a mixed rice dish from the Indian Subcontinent. It is made with spices, rice and meat. Learn how to make Chicken Dum Biryani with this recipe now!
This is my style of making Hyderabadi Biryani

Ingredients:
1 kg chicken, washed and drained completely

2 large onions, finely sliced

2 tbsps chopped coriander leaves

1 tsp saffron

1/2 cup luke warm milk

salt to taste

2 tbsps ghee + 5 tbsps oil

For marination:

3/4 cup thick curd/yogurt

8-10 green chillis, make a small slit in them

1 1/2 tbsps ginger garlic paste

1 tbsp red chilli pwd (adjust)

1/4 tsp turmeric pwd

3/4 tbsp coriander pwd

1/2 cup chopped coriander leaves

3/4 cup pudina leaves

juice of 1 lemon

1 3/4 tsps salt

Biryani masala, make pwd:

8 cloves

1″ cinnamon stick

4 elaichi/cardamom

3/4 tsp shah jeera

12 pepper corns

Ingredients to cook rice:

4 cups Basmati rice

6 cloves

3 cardamoms

1″ cinnamon stick

3 bay leaves

1 marathi mogga

1 star anise

10 mint leaves

1 tbsp oil

1 1/2 tbsps salt

water as required

1 Marinate chicken with the ingredients called for ‘marination’ along with biryani masala pwd. Keep aside for 4 hrs or a min of 1 1/2 hrs. While the chicken is marinating, work on the rest of the preparation.
2 Cook basmati rice in lots of water along with bay leaves, cloves, cinnamon, cardamom, marathi mogga, elaichi, oil, salt till its half cooked. Strain the water and spread the rice on a large wide plate. Allow to cool.
3 Heat 1 tbsp oil + 1 tbsp ghee in a vessel, add sliced onions, saute for 8-10 mts till caramelized. Remove and keep aside.
4 Add the saffron to the luke warm milk and combine well. Keep aside.
5 Take a wide deep vessel to prepare the biryani. Add 3 tbsps oil, add the marinated chicken and spread out over the vessel. Cook on high for 2 mts. Add a tbsp of oil over the chicken pieces. Reduce flame.
6 Spread half of the rice over the chicken layer, pour half a tbsp of ghee all over the rice, add half of the caramalized onions and spread over the rice. Next sprinkle a tbsp of coriander leaves and pour about one fourth cup of saffron milk over the rice. Over this layer, spread the remaining rice. Again pour half a tbsp of ghee all over, add remaining caramelized onions and spread over the rice. Finally sprinkle a tbsp of coriander leaves and pour remaining saffron milk over the rice.
7 Place lid and over the lid place a heavy weight and seal the edges with wheat dough. Cook on high flame for 2 mts. Remove the vessel from the stove and place a iron tawa. Allow to heat. Reduce to low flame and place back the biryani vessel on the iron tawa and cook biryani for 20-25 mts. Turn off heat and do not remove lid for 10 mts.
8 After 10 mts, remove lid, combine gently and serve hot with raita and curry of your choice.

AFLATOON SWEET Racipe NORTH INDIAN *Cook With Razia* In Hindi



Aflatoon / Aflaat is a sweet snack  which is combination of semolina (Rawa), Ghee and Milk. Its a healthy and delicious dish which can be prepared easily from our kitchen. It is available in Indian market.

Ingredients:
Semolina (RAWA): 1 CUP
MILK: 1&1/2 CUP
GHEE : 1 CUP
MILK POWDER: 1 CUP
SUGAR:1 CUP
ROASTED CASHEW : 50 GRAMS
BADAM: 50 GRAMS
PISTA : 50 GRAMS
Method of Preparation

Mix the ingredients except milk and dry fruits in a Tawa. Allow it to roast by continuously stirring and bring it to brown in color.

Then add milk by continuously stirring.

Cook till it dries or the ghee comes out from the mixture. This mixture is then placed in a tray and decorate with dry fruits. It can be cut into any shape.

Gajar ka Halwa Recipe With Condensed Milk | Carrot Halwa *Cook With Razia* الجزرة الحلوى

Preparation of carrot halwa :


Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.
Put the water to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.
Add the milk. Cook on a low flame for 1 hour stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.
Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins. Mix well.
Remove the gajjar halwa from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve cold, hot or at room temperature.

Bread Ice Cream Recipe in Hindi with English Sub | Bread Kulfi | Best Ice Cream *Cook With Razia *




Summer Spacial Ice Cream Kulfi. Easy to make and serve it within 45 minutes  appetizer.

Ingredients
5 bread slices
1 cup condensed milk
6 pieces grated almonds
2 pieces chopped banana
1 cup yoghurt (curd)
2 tablespoon pineapple jam
1 small chopped apple

How to make Bread Ice Cream
Step 1

Spread the jam on the bread slices and place it on a tray (or a bowl).
Step 2

Tie the curd in a muslin cloth and hang to drain.
Step 3

When all water has drained, remove and mix with condensed milk in a bowl.
Step 4

Add the mixed fruits and mix.
Step 5

Add a portion of the mixture on the bread slices.
Step 6

Garnish with almonds and keep it in the freezer for a few hours or until set.
Step 7

Serve the bread ice cream chilled.
